One Pan Cranberry Orange Chicken
Ingredients for 4 servings 4-5 organic chicken thighs or breasts, with skin ½ cup fresh cranberries 1 tablespoon honey 1 tablespoon olive oil Marinade ¼ cup cranberries 2 tablespoons honey 2 tablespoons olive oil 1 tablespoon balsamic vinegar 1 tablespoon brown sugar ¼ teaspoon sea salt ? teaspoon black pepper 2 cloves garlic, minced 1 large orange, zested and juiced Preparation for the marinade Use a food processor to mix the cranberries, honey, olive oil, balsamic vinegar, brown sugar, sea salt, black pepper, garlic, and orange. Place the chicken in a large container or deep-dish pan, then pour the marinade over the chicken. Let the chicken marinate for 1 hour or overnight for maximum flavor. Preparation for the chicken: Once you’re ready to bake, preheat the oven to 375 F. Lightly grease an 8" x 8" roasting pan and add the chicken. Pour the marinade over the chicken. Add the remaining ½ cup of cranberries to the pan. Spread the berries evenly. Bake the chicken for 25-30 minutes. Mix one tablespoon of honey with one tablespoon of olive oil, then brush the mixture over the chicken. Turn on the broiler, then broil the chicken for 2-3 minutes, or until the chicken skin is crispy. Keep an eye on the chicken so it doesn’t burn. Garnish the chicken with fresh orange zest and fresh cranberries. Discard the sauce. Top the chicken with cranberry sauce before serving. link
