Sour Cream Noodle Bake
YIELDS: 8 serving(s) PREP TIME: 10 mins COOK TIME: 20 mins TOTAL TIME: 30 mins Ingredients 1 1/4 lb. ground chuck 1 can 15-ounces tomato sauce 1/2 tsp. salt Freshly ground black pepper 8 oz. egg noodles 1/2 c. sour cream 1 1/4 c. small curd cottage cheese 1/2 c. sliced green onions (less to taste) 1 c. grated sharp cheddar cheese Directions 1 Preheat oven to 350 degrees. 2 Brown ground chuck in a large skillet. Drain fat, then add tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, then simmer while you prepare the other ingredients. 3 Cook egg noodles until al dente. Drain and set aside. 4 In a medium bowl, combine sour cream and cottage cheese. Add plenty of freshly ground black pepper. Add to noodles and stir. Add green onions and stir. 5 To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, then sprinkle on half the grated cheddar. Repeat with noodles, meat, then a final layer of cheese. Bake for 20 minutes, or until all cheese is melted. 6 Serve with crusty French bread. link

This was wonderful! I used pasta sauce instead of plain tomato sauce, and also increased the amount of cottage cheese and sour cream since I had only a one pound package of meat. I wish I had used the entire 12 oz. bag of noodles as well; I will next time. It says 8 servings, but trust me, everyone will want seconds!
