Eggs on a Cloud
4 whole eggs 1/2 cup grated Gruyere cheese 2 slices bacon 1/4 teaspoon Kosher salt pepper to taste
Preheat the oven to 350F with the rack in the middle. Line a roasting pan or baking sheet with parchment paper
Cut the bacon slices into thin bits and cook in a pan. Pat cooked bacon with a paper towel to soak up grease.
Split the egg yolks and whites, keeping each yolk separate.
Put the egg whites and salt into a bowl and beat with a whisk until stiff until stiff (we prefer using a standing mixer or a hand mixer). Start on low speed, then slowly increase until high until the peaks form.
Fold in the Gruyere and bacon bits gently, being careful to not deflate the egg whites.
Form the egg whites into four separate mounds on the parchment paper with a small indentation in the middle to form a small 'nest' for the yolks in the future.
Bake the egg whites for around 5 minutes or until set.
Put an egg yolk in the middle of each mound
Bake until the tops of the egg whites are just beginning to brown.
