Air Fryer General Tso's Chicken
1 egg
1 pound boneless skinless chicken breast cut into bite sized chunks
1/2 cup plus 2 tsps cornstarch
1/4 tsp salt
1/4 tsp black pepper
6 tbsp chicken stock
2 tbsp soy sauce
2 tbsp ketchup
2 tbsp rice vinegar
2 tbsp vegetable oil
1 tbsp minced garlic
1 tbsp minced ginger
2 tbsp sliced green onion (for garnish if desired)
Beat the egg in one bowl, add the chicken pieces and stir to coat.
In another bowl, mix 1/2 cup cornstarch and salt and pepper
Take egg covered chicken piece and dip into the cornstarch mixture. Place in greased air fryer basket.
Cook at 400 F for about 15 minutes (until brown) turning pieces a the 6-7 minute mark
In a small bowl combine the soy sauce, vinegar, chicken stock and ketchup. Whisk in the the remaining 2 tsp of cornstarch. Set aside.
Meanwhile heat oil in pan, add garlic and ginger, cook until garlic starts to brown, add sauce mixture.
Stir and cook until thickened. Toss cooked chicken pieces in the sauce until coated. Serve over rice, sprinkle with chopped green onion if desired.
