Italian Chicken Pie
6 Servings INGREDIENTS 1/3 cup grated parmesan cheese 1 1/2 cups shredded mozzarella cheese, divided 1 1/2 cups cooked chicken, shredded or cubed 1/2 teaspoon each dried basil, dried oregano, and garlic powder 1 6-ounce can tomato paste 1 cup marinara sauce 1/2 cup all-purpose flour 1 tablespoon milk 1 tablespoon vegetable oil or butter 1 egg 1/2 teaspoon baking powder 1/8 teaspoon salt 1/4 teaspoon pepper PREPARATION Preheat oven to 400˚. Grease 9-inch pie plate or casserole dish. Combine chicken, 1/2 cup of mozzarella cheese, herbs, and tomato paste, and tomato sauce in a large bowl. Sprinkle parmesan cheese into bottom of pan. Pour chicken mixture over parmesan. In a separate bowl combine flour, pepper, salt, and baking powder together. Add oil to dry ingredients and combine. Then add milk and egg and stir until batter is just combined. Pour batter over chicken mixture and even out with the back of a spoon. Bake for 35 minutes. Remove dish from oven and sprinkle with the rest of mozzarella cheese. Bake an additional 5-10 minutes or until cheese topping is completely melted.
