1 oz taco seasoning + water per package directions
16 oz can of biscuits
1/2 cup sour cream
1/2 cup mayo
8 oz shredded cheddar cheese, divided
2 medium tomatoes, sliced
1/4 cup onion, diced
1/2 of a bell pepper, sliced
4 oz jalapenos, sliced
2 tablespoons olive oil
Directions:
1. Preheat the oven to 350 degrees. Grease a 13x9" casserole dish.
2. Place biscuits in the casserole dish in a single layer. Mash together until touching and slightly going up the side of the pan. Bake for 12 minutes or until lightly browned. Take out and set aside.
3. In a skillet over medium-high heat, brown the ground beef and drain. Add the taco seasoning and water per package directions. Cook for a few minutes. Remove from heat and transfer into a bowl.
4. Combine the sour cream, mayo, and half of the cheddar cheese in a separate bowl. Mix well. Set aside.
5. In a skillet, saute onions and bell peppers in olive oil until tender. Remove and set aside.
6. Slightly smash down the biscuit crust before assembling.
7. On top of the biscuits layer the following:
* Taco Meat
* Tomato Slices
* Onion and bell pepper mixture
* Jalapenos
* Sour cream mixture
* Remaining cheddar cheese
8. Bake uncovered in 350-degree oven for 30-40 minutes.
