1. Cut long ways down the side of the loaf of bread. Remove the top as one piece and tear out the soft bread inside. Set aside.
2. In a small bowl, combine mayo, sour cream, and 1/4 cup of cheese. Mix well and set aside.
3. Brown ground beef. Drain. Add taco seasoning and water. Cook and stir for a couple of minutes. Remove from heat and set aside.
4. In a separate saucepan, saute the onions and bell peppers in olive oil until light brown. Salt and pepper to taste.
5.To assemble layer the following ingredients inside the hallowed out loaf:
Sprinkle cheese
Spread taco beef
Sprinkle cheese
Add tomatoes
Spread mayo mixture on top of tomatoes
Sauteed bell peppers
Jalapeno peppers
Sprinkle remaining cheese
6. Put the bread top back on the loaf. Transfer the sub sandwich to a cookie sheet.
7. Bake in a 350-degree oven for 15 to 20 minutes or until cheese melts.
Remove, cut, and serve immediately! Delicious! The bread will be crisp, which we absolutely love! If you would like to keep the bread soft, wrap the entire sub in foil before placing it in the oven. Either way, it's fabulous!!
