Bell Peppers Stuffed With Rice and Shrimp
4 bell peppers 1 lb. shrimp (small to medium size) 1 medium onion, chopped 1/2 clove garlic, chopped 2 tbs. butter 1 small can tomato sauce 1 cup cooked rice 3 bay leaves 1/4 cup parsley, chopped 1 egg 1/2 cup bread crumbs
Cut tops off bell peppers and clean, then set aside.
Saute shrimp, onion, and garlic in butter until cooked. Add tomato sauce and simmer for 10 minutes.
Fold in remaining ingredients.
Gently spoon mixture into peppers and place in baking dish with 1" of water on bottom. Bake at 350 for 25-30 minutes.
