Chocolate Peanut Butter Pretzel Ice Cream
Yields: 1 quart
Ingredients:
2 cups half & half (or 50% cream & 50% whole milk) 6 egg yolks 2/3 cup sugar 1 teaspoon pure vanilla extract 2 cups chocolate covered pretzels, sliced in half 1/4 cup chocolate sauce 1/4 cup peanut butter sauce
Directions:
1. Add half & half and vanilla to a saucepan on medium heat. Bring the liquid to a gentle simmer.
2. While the cream is warming up, whisk egg yolks and sugar together in a bowl. Make sure they’re well combined.
3. When the cream is just starting to simmer (don’t boil it), slowly pour it into the yolks while whisking.
4. Pour the mixture back into the saucepan and turn the heat down to medium low. Stir for several minutes until the mixture has thickened slightly and coats the back of a wood spoon or rubber spatula.
5. Remove the heat, pour the liquid into a bowl and allow it to cool for several minutes. Then place plastic wrap directly against the top of the liquid and refrigerate until cold. The plastic wrap will prevent a skin from forming.
6. Using an ice cream maker, prepare ice cream according to the manufacturer's instructions.
7. The ice cream will be a soft serve consistency. Stir in the chocolate covered pretzels, chocolate sauce and peanut butter sauce. Freeze until ready to serve.
