Oatmeal Cake With Broiled Coconut Icing

OATMEAL CAKE with BROILED COCONUT ICING
1 stick butter
1 cup oatmeal
1 1/4 cup BOILING water
mix together and let stand 20 minutes
Add:
1 cup white sugar
1 cup brown sugar
2 eggs, one at a time, beat well
1 1/3 cups sifted flour
1/2 tsp salt
1 tsp soda
1 tsp cinnamon.
1 tsp vanilla
1/2 cup coconut
Mix and pour into a pan that has been greased and
floured. (9x13)
350 degrees 35 minutes.
When cake comes out - have the topping ready spread on hot cake.
Topping/Mix together:
1 cup brown sugar
2/3 cup butter
5 Tbsp evap milk (or reg. milk)
1 cup coconut
1 cup chopped nuts (optional -- I usually don't)
Spread over hot cake.
Put back into oven under broiler. Stand there and
watch. You'll see it crisp and get brown. Watch and Take it out.
It doesn't take very long at all.
