Chocolate Raspberry Truffles
6 oz. (1 cup) semi-sweet chocolate chips 2 tbs. seedless raspberry jam cocoa powder to coat
In the top part of a double boiler over simmering water, melt the chocolate chips with the raspberry jam, stirring occasionally. Heat until the mixture is of a fudge-like consistency.
Let the mixture cool, the shape it into truffle sized balls; keep them fairly small, as they're very rich.
Roll the balls in cocoa powder and store in a covered container in the refrigerator.
Makes about 18 truffles.
You can also roll the truffles in chopped nuts, shredded coconut, or sprinkles.
