Holiday Date Cookies
Ingredients:
2 cups chopped, pitted dates (10 oz. pkg.) 3/4 cup boiling water 1 cup melted butter 2 cups sugar 2 tsp. baking soda 1/2 tsp. salt 4 beaten eggs 2 cups chocolate chips (12 oz. pkg.) 5 1/2 cups flour, packed 1/2 cup sugar for rolling
Directions:
Pour the boiling water over the dates, stir, and set aside until cool.
In a large mixing bowl combine the sugar, baking soda, salt, and eggs; beat well.
Add cooled date mixture, mix in, then add chocolate chips and melted butter and mix thoroughly.
Add the flour in 1/2 cup increments, beating after each addition.
Cover bowl with plastic wrap and refrigerate 2 hours - overnight.
Preheat oven to 325 degrees.
Roll the dough into walnut sized balls, returning dough to refrigerator between batches.
Roll each ball in the sugar and place on greased cookie sheet. flattening slightly.
Bake for 10 minutes. Cool on cookie sheet for 1-2 minutes, then move to wire rack to cool completely.
