Mocha Nut Butterballs
1 cup softened butter 1/2 cup sugar 1 tsp. vanilla 1 Tbs. instant coffee powder (if all you have are granules, crush them with a spoon) 1/4 cup cocoa powder 1/4 tsp. salt 1 3/4 cups flour 1/2 cup finely chopped nuts OR coconut
Combine butter, sugar, vanilla, coffee powder, cocoa, and salt.
Add the flour in 1/2 cup increments; stir in nuts.
Form the dough into 1" balls (you can form them around a small piece of milk chocolate, if you like), and place on an ungreased baking sheet, pressing down lightly.
Bake at 325 for 12-15 minutes, until set.
Move to wire rack to cool completely.
When the cookies are completely cool, dip them in confectioners sugar to coat; let rest for several minutes, then store in a covered container.
Makes 3-4 dozen cookies.
