Sinco de Cocoa Cookies (Chocolate Avocado Cookies)
1/2 cup salted butter 3 one ounce squares unsweetened chocolate 3/4 cup granulated sugar 1 cup brown sugar, firmly packed 2 large eggs 1 tsp. vanilla extract 1/2 tsp. salt 1 tsp. baking powder 1/2 cup mashed avocado (2 med. or 1 very large) 3 cups AP flour 1 cup semi-sweet or 60% cocoa chocolate chips
Melt the butter with the chocolate in a microwave on high for 2 minutes; stir to see if melted - if not, microwave in 30 second increments until it can be stirred smooth. Let cool.
Combine sugars in a mixing bowl until a uniform light brown color.
Add eggs, one at a time, mixing after each addition.
Mix in vanilla, and beat until light and fluffy.
Mix in salt and baking powder, and beat until thoroughly combined.
Mash avocado until it's a smooth puree, and measure out 1/2 cup. Add to work bowl and mix until well blended.
Add melted butter and chocolate to mixture; beat until everything is incorporated.
Add the flour, 1/2 cup at a time, mixing after each addition. Mix until dough is smooth and well-blended.
Stir in chocolate chips by hand until evenly distributed.
Drop dough by rounded teaspoons onto greased or parchment covered cookie sheets.
Bake at 350 for 13-15 minutes, until cookies feel dry when lightly touched on top. Remove from oven immediately - do not overbake.
Cool on cookie sheet for 5 minutes, then move to wire rack to cool completely.
