Christmas Lace Cookies
1 1/2 cups old fashioned rolled oats 1/2 cup melted butter 3/4 cup sugar 1 tsp. baking powder 1 tsp. flour 1/2 tsp. salt 1 1/2 tsp. vanilla 1 beaten egg 1/2 cup chocolate chips
Measure out the oatmeal in a medium sized bowl, and pour melted butter over it. Stir until thoroughly mixed.
In a small bowl, combine the sugar, baking powder, flour, and salt; mix well.
Add the sugar mixture to the oatmeal mixture and blend thoroughly.
Mix in the vanilla and the egg.
Add the chocolate chips, and stire the mixture until well combined.
Line the cookie sheets with foil, shiny side up. Spray foil with Pam.
Drop the cookie dough by rounded teaspoons onto the foil, leaving room for spreading. (Don't put more than 6-8 cookies to a sheet.)
Bake at 350 for 12 minutes. Remove from oven and cool on cookie sheet for 5 minutes. Pull the foil off the sheet and over to a wire rack to let cookies cool thoroughly.
When cool, peel carefully from foil and store in a cool, dry place.
Optional:
When cookies are cool, drizzle with melted chocolate chips mixed with coffee. Start with 1/2 cup of chips mixed with 6 tbs. coffee, and microwave on high for 30 second. Add more coffee or chips to get to right consistency.
