Pecan Shortbread Cookies
1 cup sugar 1 cup brown sugar 1 cup salted butter, softened 1 cup vegetable oil 1 beaten egg 2 tsp. vanilla 1 tsp. baking soda 1 tsp. salt 1 tsp. cream of tartar 1 cup uncooked oatmeal 1 cup Rice Krispies 4 cups flour 2 cups chopped pecans
Combine white & brown sugars in the bowl of your mixer to make really light brown sugar.
Add butter to bowl; mix until smooth.
Pour in the cup of vegetable oil and add the egg; mix at low speed.
Add vanilla, baking soda, salt, and cream of tartar; mix well.
Add the oatmeal and Rice Krispies; mix thoroughly.
Add flour in 1/2 cup increments, beating after each addition.
Mix in the pecans by hand.
Roll dough into 1" balls and place on cookie sheets.
Bake at 350 for 12 - 15 minutes or until golden brown around the edges.
Let cool on cookies sheet for 2 minutes, then transfer to wire rack to complete cooling.
