Tropical Banana Cake
3/4 cup milk
1 T lemon juice
1/2 cup butter
2 eggs
1-1/2 cups white sugar
2 over-ripe bananas, mashed
1 tsp vanilla
2 cups sifted flour
1/2 tsp salt
1 tsp baking soda
1 cup chopped nuts
Grease 10 x 15 jelly roll pan. Preheat oven to 350.
Add lemon juice to milk and let it set for about five minutes to sour.
Cream together butter, eggs and sugar until smooth. Blend in mashed bananas and vanilla
Add dry ingredients and sour milk alternately until well blended. Stir in nuts.
Pour into prepared pan. Bake for 20-25 minutes or until the center of cake springs back when lightly touched. Cool on wire rack.
Cream Cheese Frosting
One 3-oz pkg cream cheese, softened
6 T butter, softened
1-3/4 cups powdered sugar
1/2 T milk
1 tsp vanilla
Place all ingredients in a small bowl and beat at medium speed until smooth and creamy. (If frosting seems too stiff, add more milk one teaspoonful at a time.)
Spread frosting on completely cooled cake. Let frosting set before cutting. This cake can also be cut into small pieces and served as bar cookies.
I like to put shredded coconut on top for a more tropical touch.
