Popover Pizza
1 pound ground beef
3/4 onion..minced
1 clove garlic
1 envelope spaghetti seasoning mix
1 15 ounce can tomato sauce
1/2 cup water
1 8 ounce pkg. grated Mozzarella cheese
Pop Over Batter
2 large eggs
1 tablespoons oil
1 cup milk
1 cup flour
1/2 teaspoon salt
1/2 cup Parmesan cheese
Crumble beef and brown with onion and garlic. Drain. Add spaghetti seasoning mix, tomato sauce and water. Simmer 10 minutes. Spoon mixture into baking dish. Top with Mozzarella cheese. Keep hot in oven 375*. Make batter by beating together the eggs, milk and oil with mixer. Add flour and salt. Mix til smooth. Remove filling from oven and pour batter over filling, being sure to cover entire surface. Sprinkle the top with Parmesan cheese. Bake 30 minutes. The batter will puff way up while it bakes...just like a popover does!! Kids love to watch it while it bakes. Once it is done and you go to cut it..it will deflate and is easy to serve.

Mmmm! This sounds yummy! I'm going to share this with my 13 year old grandaughter, she loves to cook. I'll let you know how it turns out.
