Eggs in a Nest
Prep Time: 10 min Total Time: 30 min Serving Size: 4 servings
Ingredients
2 cups instant brown or white rice 3 tablespoons olive oil 1/2 to 1 yellow, white or red onion, chopped 2 cloves garlic, chopped 1/2 cup chopped carrots
1/2 cup chopped sundried tomatoes 1 large bunch roughly chopped spinach leaves 8 eggs salt and pepper to taste
Directions
1. Prepare instant rice as directed.
2. Heat olive oil in a large skillet over medium heat. Add onions and garlic and saute until golden, about 5 minutes.
3. Add carrots, sundried tomatoes and 1 tablespoon water and saute until carrots are slightly tender, about 5 minutes.
4. Add spinach and cook down slightly. Cover until spinach is wilted, about 2 minutes.
5. Using the back of a spoon, make depressions in the mixture around the edges of the pan. Crack an egg in each depression and cover until eggs are poached, about 3-5 minutes.
6.Serve egg mixture over rice and sprinkle with salt and pepper to taste.
