Chicken Jambalaya
2 Tbs. butter 1/4 cup onion, chopped 1/4 cup celery, chopped 1/4 cup green bell pepper, chopped 1 can (14.5 oz.) diced tomatoes 1 1/2 cups chicken broth 2/3 cup white rice 1/4 tsp. garlic salt 1/4 tsp. black pepper 1/4 tsp. hot pepper sauce (or more to taste) 2 cups cooked, diced chicken
Melt the butter in a skillet over medium heat. Add the onion, celery, and bell pepper and saute until tender. Stir in the rest of the ingredients, bring to a boil, then reduce the heat. Cover and simmer for about 20 minutes, or until the rice is cooked. Stir in the chicken and heat thoroughly.
