Southern Coffee Cookies
1 cup sugar 1/2 cup butter 1 egg, well beaten 2 cups flour 1/2 tsp. baking soda 1/4 tsp. salt 1 tsp. baking powder 1/2 tsp. cinnamon 3/4 cup cold coffee 1/2 cup raisins, chopped 1/2 cup chopped nuts 1 tsp. vanilla
Preheat oven to 400. Mix the sugar and butter until creamy, then add the beaten egg and mix well.
In a separate bowl, combine the flour, baking soda, salt, baking powder, and cinnamon. Stir together then add to creamed mixture. Mix well, adding in the coffee, a little at a time.
Combine the raisins, nuts, and vanilla, then fold into the batter.
Drop cookies onto a greased baking sheet and bake for 12-15 minutes.
