Chewy Coconut Lime Sugar Cookies
2 3/4 cups flour 1 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 1 cup unsalted butter, softened 1 1/2 cups sugar 1 egg 1 teaspoon vanilla extract 1 teaspoon coconut extract 4 teaspoons lime zest 3 tablespoons lime juice 1/2 to 3/4 cup sweetened coconut flakes for rolling the cookies in 1/2 cup sugar for rolling the cookies in
Preheat oven to 350. Either line your cookie sheets with parchment paper or use a silpat.
In a small bowl, mix together the flour, baking soda, baking powder, and salt.
In a large bowl, cream together the butter and sugar until smooth and fluffy. Add in the lime zest, lime juice, egg and extracts.
Gradually add in the dry ingredients.
Mix together your coconut flakes and the other 1/2 cup sugar in a small bowl.
Take about a teaspoonful of dough and roll it into a ball. Then roll around in the coconut/sugar mixture.
Bake on lined pans in a 350 degree oven until just lightly browned - 9-12 minutes.
Let stand for a minute or so on the cookie sheet then let them finish cooling on a wire rack.
