Sweet and Spicy Pork Tenderloin
1/3 cup orange juice
1/3 cup reduced-sodium soy sauce
1 tablespoon brown sugar
1/2 teaspoon ground ginger
1 teaspoon minced garlic
1/2 teaspoon red pepper flakes
1 pork tenderloin (1 pound)
1 tablespoon honey
In a large resealable plastic bag, combine the first 6 ingredients. Remove 1/4 cup of the mixture for basting. Add pork loin to mixture in bag, and refrigerate for at least 4 hours, turning occasionally to coat. Meanwhile stir honey into reserved mixture, and refrigerate.
Grill pork over medium heat for approximately 30 minutes or until meat thermometer reads 160 degrees. Baste frequently with reserved mixture. Yield: 3-4 servings.
