Coconut Key Lime Pie Fudge
Preheat your oven to 350° and line an 8" or 9" square pan with buttered foil.
Crust:
1/4 cup sugar 1 1/4 cups graham cracker crumbs 6 Tbs. unsalted butter, melted
Combine the ingredients well, put them into the prepared pan, and press down. Bake for 10 minutes; remove from oven and cool.
Filling:
1 lb. of white chocolate, chopped 1 can (14 oz.) sweetened condensed milk 1 Tbs. butter zest of one lime 3 Tbs. key lime juice (you can use fresh Key limes, but I like Nellie & Joe's) 1/2 cup of lime curd (make your own or use canned) 1 tsp. coconut extract/flavoring 1 tsp. vanilla 1/2 cup flaked, sweetened coconut - plain or toasted
In in medium sized heavy saucepan, combine the chocolate, condensed milk, and butter. Cook over medium heat, stirring constantly, until the mixture is smooth.
Remove from heat and stir in the lime zest, lime juice, and flavorings. Pour it quickly into the prepared pan.
Spoon the lime curd over the top of the fudge and swirl it in with a knife.
Press the coconut down into the top. Refrigerate until firm.
