In memory of James Tate, who loved to make this...James, I hope you read all the tracts I gave you; I want to see you again.
Potato Candy
1 small potato (no more than 3" in diameter)
1 ½ - 2 ½ lbs. confectioners’ sugar
½ cup butter (1 stick), softened
1 teaspoon vanilla extract
creamy peanut butter (optional - James didn't use it)
Peel and boil the potato. Mash, cool and pat out all liquid in potato.
With fork, combine potato and butter. Slowly start adding confectioners’ sugar, mixing thoroughly (continue adding sugar until mixture is stiff and stops accepting more sugar).
Roll out mixture, onto a confectioner's sugared board, to about ½" thickness. Gently spread peanut butter onto roll.
Roll as jelly roll, slice into coins of desired thickness. (If you don't use the peanut butter, just form a roll.)
Store in refrigerator.
My notes: Do not use an electric mixer. Also, may find easier to work with if you make 2 rolls from one batch.
