The one I used is for a nice soft sugar cookie.This is a half recipe that will make enough cookies to make about 5-1cup volume parfaits.1/3 cup shortening1/3 cup butter3/4 cup white sugar1 egg1 tsp vanilla3/4 cup all purpose flour1 tsp baking powder1/2 tsp saltFood colouringsprinklesSweetened whipped cream or cool whip topping.Cream together shortening, butter, sugar egg and vanilla until light and fluffy.Blend in baking powder and salt.Gradually blend in the flour until all combined. Bring together into a ball of soft dough.Divide into six portions and tint each portion with food colour.Using a cookie scoop or other spoon, place portions of dough into muffin tins lined with muffin liners.Bake at 350F for 15 minutes or until the edges are light brown and a toothpick inserted in the center comes out clean.Allow to cool completely.Crumble cookies into a bowl, one for each colour.Alternate layers of cookie crumbs and whipped cream/Cool Whip in clear cups or containers.End with a cream layer and decorate with sprinkles if desired.Refrigerate until serving time.
