Cherry Cheesecake Cookies Dec 18, 2015 22:10:20 GMT -5 Quote Select PostDeselect PostLink to PostMemberGive GiftBack to Top Post by PrisonerOfHope on Dec 18, 2015 22:10:20 GMT -5 Cherry Cheesecake CookiesThese cookies taste like cherry cheesecake!1/2 cup butter softened3oz cream cheese softened1 egg separated into egg and yolk1 tsp vanilla1 tsp lemon zest1/4 tsp salt1 cup icing sugar (aka powdered sugar)1 cup all purpose flour1 cup graham wafer crumbs (I recommend you start with 1/2 cup and add more if you need more, I had lots left over with one cup)1 can cherry pie filling (you will only use about 3/4 of the can)Cream together the butter, cream cheese, vanilla, egg yolk, lemon zest and vanilla together until creamy.Blend in powdered sugar.Blend in flour.Chill dough for 2 hours in fridge or about 45 minutes in freezer.Scoop out 2 tbsp portions and roll into 1 inch diameter balls.Dip ball into egg whites (beaten until frothy) and then roll in the crumbs. Place on cookie sheet covered with a silicone mat or parchment paper.Press thumb in center to make a depression.Bake at 325 for about 15-20 minutes until bottoms are light brown and cookies are set.Press the center lightly with the end of a wooden spoon as soon as they come out of the oven.Allow to cool completely and fill centers with cherry pie filling.Store covered in the refrigerator.
