Double Chocolate Whipped Shortbread Cookies
1 cup butter softened 1/2 cup icing sugar 1/4 tsp vanilla ( I forgot to mention the vanilla in the video, but it is there!) 1 1/4 cups flour 1/4 cup unsweetened baking cocoa 1/3 cup cornstarch 1/4 tsp salt (omit if you are using salted butter) 1 cup chocolate chips (mini or regular) Pecan halves for garnish (optional)
Beat butter and icing sugar until light and fluffy, add in vanilla and blend. In another bowl combine the flour, cornstarch, cocoa powder and salt. Add dry ingredients to sugar/butter mix and blend until combined. Stir in 1 cup mini chocolate chips. Drop by tablespoonfuls onto a cookie sheet covered with a silicone mat or parchment paper. You can also pipe these but the chocolate chips clog up the piping tips sometimes. Bake at 350F for about 12 minutes, until set and light brown.
