1 brownie mix or a brownie recipe that makes a brownie that fits into an 8x8" or 9x9" pan. 14 oz can of caramel flavored (dulce de leche) sweetened condensed milk 2 cups (7oz, 200g) sweetened flaked coconut 1/4 evaporated milk (I did not use this) 1/2 cup of semi sweet chocolate chips, melted.
Bake brownies according to package or recipe directions and allow to cool completely (or almost completely).
Place your coconut on a cookie sheet lined with foil or parchment and spread it evenly.
Bake at 350 F for 5 minutes, remove and stir.
Put it back in for another 3 minutes and check it. Stir.
If you have a lot of white coconut left, but it back in for another 2 minutes or so. Crouch down by the oven door and watch the coconut at this stage, it burns VERY quickly.
Place the dulce de leche condensed milk in a large bowl and cook in the microwave on high for 2-3 minutes.
Stir in coconut and spread the mixture over the brownies.
Drizzle the chocolate over the top of the coconut mixture and chill brownies until cool.
I stored these in the refrigerator.
*** Recipe Note**** The original recipe asks that you combine 1/4 cup of evaporated milk with the dulce de leche before heating it in the microwave. I think that their dulce de leche was thicker than mine and needed to be thinned? I found that this recipe was perfect without the additional milk when using Eagle Brand Dulce De Leche flavoured sweetened condensed milk.
