Banana Pudding Cookies
yield: 24 prep time: 10 minutes cook time: 10 minutes total time: 20 minutes Ingredients 1/2 cup unsalted butter, softened to room temperature 3/4 cup granulated sugar 1 teaspoon vanilla extract 1 large egg 1 (3.4 ounce) box Instant Banana Cream Pudding 1/2 teaspoon baking soda 1/2 teaspoon salt 1 1/4 cups all purpose flour 1/2 cup white chocolate chips Instructions In a large mixing bowl, cream the butter and sugar. Add the vanilla extract and egg and mix until smooth. Add the dry pudding mix, salt, baking soda, and flour and mix well. Stir in the white chocolate chips. Refrigerate the dough for 20-30 minutes to prevent flattening. Using a cookie scoop or tablespoon, scoop the refrigerated dough onto a cookie sheet lined with parchment paper. Bake at 350° for 9-11 minutes or until edges are golden brown. Remove cookies from the oven and set aside to cool for 10 minutes, then transfer them to a wire rack to cool completely.
