DELICIOUS CHICKEN MACARONI and VEGETABLE SOUP | Sopa De Coditos Con Pollo ❤
There are a lot of CHICKEN, MACARONI AND VEGETABLE SOUP recipes out there, but I can almost guarantee you that this is one of the best. My secret is to sear the well seasoned chicken to a golden brown then add freshly ground spices with the remaining seasonings and vegetables. I love chicken soup with pastas, I've made more variations than you'd think possible, but this version is way up on the top of my list. I use carrots, gold potatoes, zucchini, corn and small elbow macaroni to keep my soup on the heartier side and I make it totally complete with a big spoonful of pinto beans on the side. I love to serve this soup with freshly made corn tortillas, and i love to rub butter on them then roll it up with a couple slices of Panela cheese. This soup is so inexpensive to make, but it is fit for a king.
INGREDIENTS----------------
2 Chicken wings (cut in half with tips removed)
6 Chicken legs ( tip of drumstick and skin removed) (removing the tip is optional)
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp ground pepper
1/2 tsp salt
1 tsp peppercorns (molcajete)
1 tsp whole cumin (molcajete)
1/4 tsp salt (molcajete)
3 large garlic cloves (molcajete)
1/2 C. water (molcajete)
1 Tbsp Canola oil for searing
1/2 medium diced onion
2 green onions (green and white parts)
1 Celery rib (diced)
1 C. diced orange bell pepper
1 Tbsp Chicken Better than bouillon
1 & 1/2 C. diced tomatoes
1 Tbsp tomato paste
Salt to your liking
10 C. water (you can add more or less)
2 C. small elbow macaroni
2 medium carrots (cubed)
2 medium gold potatoes (cubed)
2 medium zucchini (cubed)
1 & 1/2 C. corn (fresh or canned)
1/2 C. chopped cilantro (optional)
SIDES-------------
REFRIED BEANS (optional)
