Apple Cream cheese Bundt Cake

What you’ll need
All-purpose flour or cake flour
Sugar
Salt
Baking powder
Unsalted butter (Room temp)
2 eight-ounce packages Cream Cheese (Room temp)
Heavy whipping cream or whole milk (Room temp)
Large eggs (Room temp)
5 medium-sized granny smith apples
Vanilla extract
Butter extract
Cinnamon
All spice
Confectioners’ sugar
Preparation of ingredients
Apple topping and filling
Step 1- Peel 5 medium-sized granny smith apples. Align the center of the corer with the apple core itself and push down. Discard the apple core. Cut each piece of apple into slices and place into a medium-sized bowl.
Step 2- Add 2 tablespoons sugar, 1 teaspoon cinnamon, 1/4 teaspoon all spice. 1/2 teaspoon vanilla extract and 1/8 teaspoon salt into medium sided bowl with apple slices in it. Stir all ingredients together or until apples are coated with the cinnamon and spices and set aside.
Dry ingredients (All-purpose or cake flour mixture)
Step 3- Sift 2 1/2 cups all-purpose flour or cake flour, 1 1/2 teaspoons baking powder and 1/4 teaspoon salt into a medium-sized bowl and stir until combined.
Wet ingredients (Cream cheese mixture)
Step 4- Add 1/3 cup heavy whipping cream or whole milk (Room temp), 2 teaspoons vanilla extract, 1 teaspoon butter extract, and 12 ounces of cream cheese (Softened and at room temp) into a separate medium-sized bowl. Stir really well until combined.
Cake batter
Step 5- Add 2 sticks unsalted butter (Softened and at room temp), and 2 1/3 cups sugar into stand mixer bowl. Mix on high speed for 6 minutes. Scrape down sides of bowl.
Step 6- Start mixer on medium speed and add 4 large eggs (Room temp) in one at a time. Scrape down sides of bowl.
Step 7- Add All purpose or cake flour mixture (Dry ingredients) and Cream cheese mixture (Wet ingredients) into the batter 3 separate times. Mix on a medium low speed each time until combined. Make sure you scrape down the sides of your mixing bowl each time as well.
Baking the cake
Spray Bundt pan with Baker’s joy non-stick baking spray
Preheat oven to 325 degrees.
Step 8- Add 10 ounces in weight of apple slices into Bundt pan as evenly as possible. Pour half of the cake batter on top of the apples and spread batter around as evenly as possible.
Step 9- Add another 10 ounces in weight of apple slices on top of the batter. Sprinkle 2 teaspoons cinnamon and 1/2 teaspoon all spice on top of the apples.
Step 10- Pour the rest of the cake batter on top of the apples and swirl the apples into the batter by taking a spoon and swirling it into the batter. Once done spread batter around cake pan as evenly as possible. Shake pan slightly and tap the bottom of the Bundt pan to make batter more even.
Step 11- Place into a preheated 325-degree oven on the bottom rack for 1 hour and 15 minutes. Once the baking time has ended remove cake from oven. Toothpick inserted should come out clean. If the toothpick does not come out clean, bake for an additional 5 to 10 minutes. From there, let the cake cool for 4 to 5 hours or completely before removing it from the pan. Careful not to remove the cake from the pan too early or it will break apart.
Making the cream cheese spice icing
Step 12- Add 1 1/2 cups confectioners’ sugar, 2 ounces (or 1/4 cup) cream cheese (Softened and at room temp), 3 tablespoons melted unsalted butter, 3 tablespoons warm heavy cream or whole milk, 1 teaspoon vanilla extract, 1/2 teaspoon butter extract, 1/8 teaspoon almond extract (Optional), 1/8 teaspoon cinnamon, 1/8 teaspoon all spice and a light sprinkle of salt to bring out all of the flavors. Stir all ingredients with a whisk until combined or until mixture is creamy and smooth with no visible lumps.
Step 13- Pour cream cheese spice icing into a small squeeze bottle. Flip the cooled cake onto a cooling rack with an 11 by 17-inch baking pan underneath it. Take squeeze bottle and drizzle icing on top of the cake. Let icing set for 10 to 15 minutes and after that, the cake is ready to be served.
