Cornbread Dressing
RECIPE
1 pan OLD SCHOOL CORNBREAD ( crumbled) (Recipe below)
2 quart turkey stock
1 cup chopped celery
1 cup chopped onions
2 tablespoons chopped sage
2 tablespoons chopped thyme
2 tablespoons chopped rosemary
1 cup chopped turkey neck meat( previously cooked for 1 hour)(optional)
1/2 cup chopped giblets (previously cooked for 2 hours)(optimal)
1# sage breakfast sausage
4 eggs beaten
In large stock pot
cook sausage until brown and crumbled
Add onions, herbs ,celery and turkey stock
Simmer for 30-45 minutes
Add turkey neck and giblets
Simmer another 10 minutes
Add stock to crumbled CORNBREAD in large bowl and add eggs
Mix well and season with salt and pepper
Pour in baking dish and cook for 30 -45 minutes uncovered on 350 degrees or until its slightly set (don't over cook, dressing should be moist, not dry and crumbly. Maybe crisp edges.
GREAT with any protein you make. Especially, Turkey or Chicken. ENJOY with giblets gravy, cranberry sauce,
THIS CAN BE FROZEN UP TO 1 MONTH
OLD SCHOOL CORNBREAD(FOR CORNBREAD DRESSING)
This my recipe for the cornbread that i use for my old school cornbread dressing
RECIPE
Cooking spray to grease pan
1 stick melted butter or 4 oz vegetable oil
1cup buttermilk
1large egg
1/2 cup sour cream
1 1/4 cups yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
Heat the oven to 400°F. Spray the bottom and sides of an 8-inch square pan or 9-inch round cake pan with the cooking spray.

In a 1-quart saucepan, heat the butter over low heat until melted.

In a large bowl, beat the melted butter, milk and egg with a fork or wire whisk until well mixed. Add the cornmeal, flour, sour cream ,baking powder and salt all at once; stir just until the flour is moistened and smooth ). Pour batter into the pan; use a rubber spatula to scrape batter from bowl. Spread batter evenly in pan and smooth top of batter.

Bake 20 to 25 minutes or until golden brown and a toothpick inserted in the center comes out clean. Serve warm.
