Outback Steakhouse Honey Wheat Bushman Bread for Bread Machine
Serve with whipped honey-butter.
1 1/4 cups warm black coffee (90-F - 100-F) 1/4 cup honey 2 Tbsp brown sugar or dark brown sugar 2 Tbsp butter, softened or melted 1 Tbsp unsweetened cocoa powder 1 tsp table salt 2 cups Bread Flour 1 1/2 to 1 3/4 cups Whole Wheat Flour 2 1/4 tsp Bread Machine or Instant Yeast
Regular White Bread Cycle; 2 lb loaf; Medium crust.
Add ingredients to bread machine in order listed.
Set Bread machine to Regular White Bread Cycle; 2 lb loaf; Medium crust.
Press start.
Check the dough after about 5-minutes of kneading and add water or flour as needed, a tablespoon at a time, to form a smooth, non-sticky ball of dough. It should hold its own shape but not be so dry that it is crumbly.
When done, remove from pan and allow to cool before slicing.
Makes one 2-pound loaf of Outback Steakhouse Honey Wheat Bushman Bread
Honey Butter
1/2 cup butter, softened 1/3 cup honey
Beat butter and honey together until creamy. Serve at room temperature.

Swirled Cinnamon Craisin Bread for Bread Machine
This makes a swirled loaf of cinnamon craisin (Dried Cranberries) bread by using the Manual Bread Machine Dough Cycle, removing and shaping the dough by hand, returning the shaped dough to the bread machine to rise, and baking the bread with the bread machine Manual Bake Cycle. Finally the cooled cinnamon raisin bread is drizzled with a sugar glaze. To bake in a regular oven, see note at bottom.
Bread: 1 egg, beaten 1 1/3 cups buttermilk or plain yogurt or sour milk 1/4 teaspoon dried ground ginger 1 teaspoon vanilla extract 1 teaspoon apple cider vinegar 1/3 cup white granulated sugar 1 packet (2 1/4 tsp) bread machine or instant yeast 1 teaspoon salt 1/3 cup softened butter or butter flavor Crisco 3 1/3 cups bread flour
Filling: 1/2 cup Craisins (Dried Cranberries) 2 Tablespoons softened butter 2 Tablespoons white granulated sugar 2 Tablespoons brown sugar 2 teaspoons Penzey's Vietnamese cinnamon 2 teaspoons Penzey's Apple Pie Spice 1 Tablespoon flour
Topping: 1/4 cup confectioners sugar 1 teaspoons milk 1/2 teaspoon vanilla extract
Add all the Bread ingredients in order given or as recommended by your bread machine manual. Stir ingredients together before adding butter and flour. Select MANUAL DOUGH CYCLE and press START.
In the first few minutes of kneading, adjust the dough, if necessary, so it is smooth and non-sticky by adding flour or water, a tablespoon at a time.
After the MANUAL DOUGH CYCLE completes, remove the dough and mixing paddle from the machine.
Roll the dough out on a bread board into a 9 x 13 inch rectangle. Distribute the craisins evenly over the entire surface of the rolled out dough.
Press them into the dough gently. Spread 2 Tablespoons of softened / melted butter over the entire surface of the rolled out dough.
Mix 2 Tablespoons granulated sugar, 2 Tablespoons brown sugar with 2 teaspoons Penzey's Vietnamese cinnamon, 2 teaspoons Penzey's Apple Pie Spice and 1 Tablespoon flour. Make sure they are mixed well. Sprinkle the sugar/cinnamon mixture evenly over the entire surface of the rolled out dough.
Starting at a 9-inch wide end, roll the dough into a cylinder. Pinch the seam shut along its length of the rolled cylinder and pinch shut the two ends of the cylinder roll of dough.
To bake in regular oven see note at bottom.
Replace the rolled dough in the bread machine with the large pinched seam down and the two ends of the roll folded under to fit it in the machine. Make sure bread machine is off. Close bread machine lid and allow the dough to rise until it has reached the top of the bread baking basket (about 1 to 2 hours).
Select MANUAL BAKE CYCLE and press START. When the MANUAL BAKE CYCLE completes, remove the bread from the machine and allow it to cool on a wire rack.
When the bread has cooled, mix the topping ingredients and drizzle over the top of the loaf of Cinnamon Raisin Bread.
Make sure to return the kneading paddle to your bread machine so it won't get lost.
Makes one 1 1/2 lb loaf.
Note: To bake in oven, place rolled loaf in an 8 x 4 x 2 loaf pan with the seam on the dough on the bottom. Allow to rise until double in size, about 1 hour.Bake in a 350-F pre-heated oven for 45-minutes to 1 hour (until center internal loaf temperature reaches 195-F). Allow to cool and drizzle with topping.

Bread Machine Mock Dark Rye Bread
I wanted some dark rye bread and didin't have any rye flour so I decided to make it using whole wheat flour.
Here is the resulting recipe. It makes a dark loaf that looks like and tastes like dark rye. Most of the flavor comes from the caraway seeds. It is really good for sandwiches and has a crumb like honey wheat bread.
Ingredients
1 1/4 cups water 2 Tablespoons molasses or dark corn syrup 1 Tablespoon vegetable oil 1 teaspoon salt 2 cups all-purpose flour 1 1/2 cups whole wheat flour 2 Tablespoons yellow corn meal 3 Tablespoons packed brown sugar 1 Tablespoon unsweetened cocoa powder 1 Tablespoon caraway seed (or to taste) 2 1/4 teaspoons (or 1 packet) bread machine yeast
Directions
Place ingredients in the pan of the bread machine in the order recommended by the manufacturer.
Select the BASIC or WHITE BREAD cycle, 1 1/2 pounds and press START.
Monitor the first few minutes of kneading. If necessary to form a smooth, non-sticky dough ball, add more flour or water a tablespoon at a time, as needed.
Makes one 1 1/2 lb loaf.

King's Hawaiian Bread Copycat for Bread Machine
This recipe makes a single 2-pound loaf.
Ingredients
3/4 cup pineapple juice (from heavy syrup, canned)* 1 egg 1/3 cup white granulated sugar 1/3 cup plain yogurt 1/3 cup prepared mashed potatoes (from instant ok) 3/4 teaspoon table salt 1/4 teaspoon ground dried ginger 1 1/2 teaspoons vanilla extract 1/4 teaspoon lemon extract 2 drops yellow food coloring (optional) 1 pkg bread machine or instant yeast (2 1/4 teaspoons) 4 Tablespoons Butter Flavored Crisco, softened 4 to 4 1/2 cups all-purpose flour
Directions
1. In a mixing bowl, stir together the pineapple juice, egg, sugar, yogurt, mashed potatoes, salt, ginger, vanilla extract, lemon extract, yellow food coloring (optional), and bread machine or instant yeast. Mix well. Add mixed ingredients to bread machine.
2. Add Butter Flavored Crisco, in Tablespoon sized pieces, to the bread machine.
3. Add 4 cups of all-purpose flour to the bread machine.
4. Set the bread machine for Sweet Bread Cycle (or White Bread if your machine doesn't have a Sweet Bread Cycle) and 2 pound loaf, medium color crust. Press Start.
5. After dough has mixed for a few minutes, add a little water or flour as needed to form a smooth ball of dough. It should be a smooth dough ball that holds its shape and not like a batter.
6. When the bread is done, remove from machine and allow to cool before slicing.
*There is about 3/4 cup of liquid in a 20 oz can of Pineapple. Add a little water if necessary to make 3/4 cup. Save the Pineapple pieces for another use.

Wonder Bread Copycat for Bread Machine
This is a delicious, buttery white bread that is great for sandwiches, toast or just plain with butter.
This has the lightness and texture of Wonder Bread but with a nice buttery flavor.
2/3 cup lukewarm water 1 large egg 1 tablespoon granulated sugar 1 1/4 teaspoons table salt 5 tablespoons soft butter (I used butter flavor Crisco) 1/2 cup plain yogurt 3 1/4 to 3 1/2 cups Unbleached All-Purpose Flour 2 1/2 teaspoons (or 1 packet) bread machine or instant yeast
Add ingredients to bread machine in order listed or according to your bread machine mfg's directions.
Settings: White Bread, 1 1/2 lb loaf, Medium Crust.
Press Start.
Makes One, 1 1/2 lb loaf.

Rosemary Olive Bread for Bread Machine
I created this recipe by combining several olive bread recipes. The olives, rosemary and basil releases a wonderful aroma while it's baking and carries through to the finished product when you eat it. Try it warm spread with butter. It makes wonderful savory toast the next day.
Makes one 2-lb loaf
Ingredients:
2 tablespoons olive oil 1/3 cup of brine (juice) from jar of green olives, 1 1/3 cups Warm water 2 tablespoons honey 1 teaspoon table salt 1 1/2 teaspoons dried basil 1 1/2 teaspoons crushed dry rosemary 4 cups all-purpose flour 2/3 cup whole wheat flour 2 1/4 teaspoons (or 1 packet) active dry, bread machine or instant yeast
1/3 cup drained black olives, sliced into fine rings 1/3 cup drained green olives, sliced into fine rings (pimento stuffed olives ok)
Preparation:
Mix 1/3 cup of olive brine in a 2-cup measure; add 1 1/3 cups of warm water. Mix well. Add to bread machine.
Add all ingredients (except for the sliced olives) into the bread machine in the order given.
Select Basic or White Bread setting; 2-lb loaf; medium crust.
If required, add more water or flour, a tablespoon at a time, to form a firm, slightly sticky, non-crumbly ball of dough.
Add the sliced olives at the beep.
Makes one 2-lb loaf of olive bread.

Honey Whole Wheat Bread for the Bread Machine
This makes a really good loaf of bread. Best of all, you know what's in it.
1 1/2 lb loaf
1 1/4 cups lukewarm water 1 teaspoon table salt 1/3 cup honey 3 Tablespoons butter, softened 2 Tablespoons powdered milk or powdered coffee creamer 3 1/4 cups whole wheat flour 2 1/4 teaspoons bread machine yeast (or 1 packet)
Add ingredients to bread machine in order given, or according to your bread machine instructions.
Set machine to WHOLE WHEAT, MEDIUM COLOR, 1 1/2 LB LOAF. Press START.
During first few minutes of kneading, adjust dough, as needed, with flour or water to form a smooth, firm, non-sticky, non-crumbly dough.
Yield: One 1 1/2 lb loaf of wheat bread.

San Benito House Whole-Wheat Bread for Bread Machine
(Shared by San Benito House, Half Moon Bay, CA)
Adapted for bread machine.
1 cup warm water (115 degrees F)
1/3 cup dark molasses
1/3 cup + 1 Tablespoon vegetable oil
4 teaspoons brown sugar
1 teaspoon table salt
2 2/3 cups bread flour
1 1/3 cups whole-wheat flour
2 1/4 teaspoons (or 1 packet) Bread machine or instant yeast
Place ingredients into bread machine in the order recommended according to the
manufacturer's instructions.
Set to White or Regular Bread, 1 1/2 lbs, Medium crust.
Press Start.
Makes one 1 1/2 lb loaf.

Soft Italian Breadsticks (Bread Machine)
1 cup warm water
3 Tbsp butter or margarine, softened
1 ½ tsp salt
3 cups bread flour
2 Tbsp sugar
1 tsp Italian seasoning
1 tsp garlic powder
2 ¼ tps yeast
Topping: 1 Tbsp butter melted, 1 Tbsp grated Parmesan cheese
In bread machine pan, place the first 8 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 -2 Tbsp of water or flour if needed). When cycle is completed, turn dough onto a lightly floured surface; divide in half. Cut each portion into 12 pieces; roll each into a 4 inch to 6 inch rope. Place 2 inches apart on greased baking sheets. Cover and let rise in a warm place until doubled, about 20 minutes. Bake at 350 for 15 to 18 minutes or until golden brown. Immediately brush with butter; sprinkle with Parmesan cheese. Serve warm. Makes 2 dozen.
