Strawberry Shortcakes
Ingredients
Drop Biscuits Ingredients
2 cups all-purpose flour
1/4 cup white granulated sugar
1 TBS baking powder
1/2 tsp salt
1/2 cup cold butter, cut into pieces
1 cup milk
Strawberries
1 lb strawberries, washed & dried, remove stems cut into quarters
2 TBS white granulated sugar
Whipped Topping
2 cups heavy whipping cream
1 tsp vanilla extract
1-2 TBS powdered sugar
Instructions
Drop Biscuits Instructions
Preheat oven to 425 degrees. Line a sheet pan with parchment paper.
In a food processor, pulse using the dropped biscuits ingredients listed above of flour, white granulated sugar, baking powder, salt together for one minute. Add cold butter pieces to flour mixture and pulse until pea size crumbs form.
NOTE: Instead of a food processor, you can also whisk together dry ingredients in a large bowl and blend in butter with a pastry cutter. Then add milk, stirring until a wet dough forms.
Drizzle in milk as your are pulsing, a dough should form. Using a large cookie scoop, drop dough onto prepared sheet pan. (Makes about 15-18 biscuits.) Sprinkle a little bit of white granulated sugar on top of each dropped dough.
Bake 12-15 minutes until biscuits are golden brown. Cool biscuits.
Preparing strawberries
Place cut strawberries into a medium bowl. Sprinkle 2 TBS white granulated sugar on top of strawberries. Stir until strawberries are fully coated. Set aside and stir every few minutes.
Preparing whipped topping
In a large mixing bowl, whip heavy whipping cream until soft peaks form. Add in vanilla extract and powered sugar. Beat again until just blended and it holds it shape.
NOTE: don't over mix or it will curdle.
Building a strawberry shortcake
Slice biscuits in half to form top and bottom.
On the bottom, top with 2 TBS whipped topping, top with strawberries & juice, top with more whipped topping, place top biscuit on the whipped topping. Enjoy.
