Charleston Cream Cheese Cookies
1/2 cup butter, softened 3 oz. cream cheese, softened 2 cups sugar 2 eggs 1 tsp. vanilla 1/4 tsp. lemon extract 4 cups flour 1 tsp. baking powder 1/2 tsp. salt 1/2 cup marmalade or apricot preserves (I sometimes use raspberry) 1/4 cup powdered sugar
Cream butter, cream cheese, and sugar until light & fluffy. Add eggs, one at a time, and beat well. Stir in vanilla and lemon. Sift together flour, baking powder, and salt, then add to cream cheese mixture.
Roll dough into a log, 16-18" long. Place on aluminum foil, roll up, and seal. Chill for at least 3 hours.
Slice dough into 3/8" rounds and place on baking sheet. Spoon 1/2 tsp. of jam into center of each cookie.
Bake at 350 for 8-19 minutes, remove from baking sheet, and dust with powdered sugar.
