I was never a chicken salad fan, but one day I went to my weekly ladies' Bible study, which was always followed by lunch. To my dismay, the person whose turn it was to bring food that week made chicken salad sandwiches, but I was so hungry I tried one anyway. Oh my goodness! Joan - who was like a mother to me - is now with the Lord. I suspect she may be making batches and batches of her chicken salad to serve at the Heavenly Feast. Joan's Heavenly Chicken Salad2 8 oz. cans chicken (Costco's brand is best) 1 1/2 chopped dill pickles 1 can water chestnuts, chopped green onions ranch dressing dill weed salt & pepper Break up the chicken in a food processor. Add green onion to taste. Sprinkle with dill weed, salt, and pepper. Add chopped green onion to taste. Add a squeeze of fresh lemon juice. Mix well with ranch dressing until moist. Joan - a.k.a. "The Cholesterol Queen" - used to serve these on buttery mini croissants. She also made a lilikoi pie that was out of this world. I never did get the recipe for that, but then again, I no longer have vines loaded with lilikoi in my back yard. (Soon though....and I'll also be seeing Joan so I can get the recipe from her then!)
