PRETZEL M&M COOKIES
1 c. unsalted butter, softened 1 c. light brown sugar, packed 1/2 c. granulated sugar 2 large eggs 1 Tbsp. vanilla extract 2 1/2 c. all-purpose flour 3/4 tsp. salt 3/4 tsp. baking soda 1/4 tsp. baking powder 1 c. bittersweet OR semisweet chocolate chips 1 1/2 c. Pretzel M&Ms Sea salt for sprinkling over cookies
Preheat oven to 375 degrees. Lightly spray 2-3 baking sheets with nonstick cooking spray or line with parchment paper or Silpats. Set the pans aside.
In a large bowl of an electric mixer, using the paddle attachment, cream the butter, brown sugar and granulated sugar until smooth. Add the eggs, one at a time, beating to combine after each one. Add the vanilla and beat until the mixture is smooth.
In a medium bowl, whisk together the flour, salt, baking soda and baking powder. Add to the creamed mixture, beating on low speed just until combined. The batter will be thick. With a wooden spoon, stir in the chocolate chips and M&Ms.
Drop the batter by heaping tablespoonfuls (or use a medium cookie scoop) onto the prepared pans, placing the cookies 2" apart. Sprinkle the tops of each cookie lightly with sea salt.
Bake @ 375 degrees for 10-12 minutes or until the cookies are slightly golden brown around the edge. Let sit on the pan for 2 minutes, then remove from the pans to wire racks to cool completely. Makes about 2 1/2-3 dozen cookies.
