Raspberry Coconut Bars
From page 148 from Kathy's Lutheran Church Cookbook.
3/4 cup butter
3/4 cup sugar
3/4 cup sugar
1 cup flour
2 cups sweetened coconut/divided
1 1/2 cups quick oatmeal
3/4 cup (9 oz.) raspberry preserves
Beat butter, brown sugar and sugar together until fluffy. Add flour, 1 cup coconut and oatmeal, mix together. Set aside 1 cup of dough. Press remaining dough evenly over bottom of 9" x 13" pan. Spread raspberry preserves over dough. Crumble remaining dough over the preserves. Sprinkle 1 cup coconut over the top and bake for 25 minutes. This is one of the recipes that my girlfriend's sister makes, I know it will be good.
