Dixie Lee's German Apple CakePreheat oven to 350 degrees. Ingredients: 4 cups peeled & sliced apples (4-5 medium) 3 eggs 1 cup vegetable oil 2 cups sugar 1 tsp. baking soda 2 tsp. cinnamon 1/2 tsp. salt 2 cups flour, packed down Instructions: Grease a 9 X 13 baking pan. Prepare apples as you would for a pie, place the slices on the bottom of the cake pan. In a medium bowl, whisk the eggs with the oil until thick; add in sugar and beat well. Mix in the vanilla, baking soda, cinnamon, and salt; mix thoroughly. Add the flour in increments, mixing after each addition. Using a large spoon, drop the batter over the apples. Bake at 350 for 50-60 minutes. Cool in pan on a wire rack. Apple Cake Frosting8 oz. pkg. softened cream cheese 2 tsp. vanilla 1 tbs. lemon juice (freshly squeezed, if possible) 4 tbs. melted butter 2 cups confectioners sugar Stir the vanilla into the cream cheese, then add the lemon juice and melted butter. Mix until smooth. Beat in the sugar in 1/2 cup increments, checking consistency after each addition; stop adding sugar when it's the consistency of frosting. (It it gets too thick, add a little more lemon juice.) Frost cake. NOTE: You can try this with other fruit, such as peaches.

Note, I'm not a big icing fan; I prefer this cake with either powdered sugar sprinkled on top after it's baked and cooled, or else with a cinnamon sugar mixture sprinkled on top before baking.
