Chocolate Marshmallow Cookie Bars
Bottom Layer:
1/2 cup butter (1 stick)
1 oz. square unsweetened chocolate
1/2 cup sugar
1 cup flour
1 tsp. baking powder
1 cup chopped nuts
1 tsp. vanilla
2 lightly beaten eggs
Cream Cheese Layer:
8 oz. package cream cheese (will be divided)
1/4 cup softened butter
1/4 cup sugar
2 Tbs. flour
1/2 tsp. vanilla
1 beaten egg
1/2 cup chopped nuts
1 cup semisweet chocolate chips
2 cups mini marshmallows
Frosting:
1/4 cup butter
1 oz. square unsweetened chocolate
2 oz. cream cheese from package
1/4 cup milk
1 tsp. vanilla
1 lb. confectioners sugar
Melt butter & unsweetened chocolate; stir in sugar.
Combine flour, baking powder, and nuts; add to chocolate mixture and stir well.
Stir in vanilla and eggs.
Spread the batter in a greased & floured 9 X 13 cake pan.
Make cream cheese filling:
Soften 6 oz. of the cream cheese and combine it with the butter, sugar, flour, and vanilla; stir until smooth.
Add the egg and stir until well-combined.
Mix in the nuts.
Spread the cream cheese layer over the chocolate layer, using a spatula. Sprinkle the chocolate chips over the top.
Bake at 350 for 20-25 minutes.
Remove pan from oven, sprinkle the top with the marshmallows, and return to oven for 2 minutes.
Meanwhile, make the frosting:
Melt the butter, break in the chocolate, and stir in the 2 oz. of cream cheese and the milk.
Heat the mixture until it can be stirred smooth; beat in the vanilla.
Beat in a cup of the confectioners sugar, then a cup more at a time; stir until smooth.
Spread the frosting over the bars, swirling it into the marshmallows.
Cool on wire rack, then put into refrigerator to chill. Cut into bars.
