Brownie Bottom Neapolitan Cheesecake
Ingredients
FOR BROWNIE BOTTOM
1/2 c all purpose flour
1/4 tsp baking powder
1/4 tsp salt
2 Tbsp unsalted butter
2 oz unsweetened chocolate
1 c sugar
2 lg eggs
1 tsp pure vanilla extract
VANILLA LAYER
1/2 c unsalted butter, softened
8 oz package of creamed cheese, softened
1 tsp pure vanilla extract
1/2 tsp salt
1 c powdered sugar
CHOCOLATE LAYER
1/2 c unsalted butter, softened
8 oz package of creamed cheese, softened
1 tsp pure vanilla extract
1/2 tsp salt
2 Tbsp unsweetened cocoa powder
1 c powdered sugar
2 Tbsp chocolate syrup
STRAWBERRY LAYER
1/2 c unsalted butter, softened
8 oz package of cream cheese, softened
1 tsp pure vanilla extract
1/2 tsp salt
1/4 c strawberry syrup (or more depending on your taste)
1/4 c powdered sugar
Directions
Preheat oven to 350'F; Grease a 9 inch springform pan.
Whisk together flour, baking powder and salt
in a small heavy sauce pan over low heat melt butter and chocolate together. Stir frequently until smooth.
Turn off heat and remove from burner. Add eggs, sugar and vanilla to sauce pan and mix until smooth.
Pour batter into greased spring form pan and back on bottom wrack for about 20 minutes, or until a toothpick comes out clean.
Cool brownie completely.
In a medium mixing bowl mix all "vanilla layer" ingredients together until smooth and fully incorporated.
In another medium mixing bowl mix all "strawberry layer" ingredients together until smooth and fully incorporated.
In another medium mixing bowl mix all "chocolate layer" ingredients together until smooth and fully incorporated.
Remove ring from cooled brownie.
With a bread knife even the top of the brownie out. Remove it from the springform pan bottom. and place it on a cake plate.
Side note: You want your brownie layer to be about 1/2 inch to 3/4 inch thick. Just slice across the top with the knife until level. (Don't over do it though!!!)
Place springform pan ring back around brownie bottom. (Do not put the bottom piece back on.) Layer cheese cake filling on top of each other - chocolate, strawberry, then vanilla. You can use a little chocolate sauce for garnish.
Set in the fridge for about 6 hours.
After it is done setting, run a sharp knife around the rim of the springform pan and remove the springform pan ring
