Chocolate Caramel Pecan Bars
4 one-oz. squares semi-sweet baking chocolate, or 3/4 cup chocolate chips 3/4 cup butter 1 1/2 cups granulated sugar 2 tbs. caramel ice cream topping 3 beaten eggs 1/4 tsp. salt 1 tsp. vanilla extract 1 1/2 cup AP flour, packed 1 1/2 cups chocolate chips 1 1/2 cups pecans
Line 9 X 13 pan with foil large enough to hang over sides and spray with Pam.
Microwave the chocolate and butter for one minute; stir. If necessary, repeat every 20 seconds until melted. (Stir to make sure.)
Place sugar in mixing bowl, stir in butter/chocolate mixture, and stir until well combined.
Add caramel ice cream topping, and mix in thoroughly.
Add eggs, stirring thoroughly; mix in salt and vanilla.
Mix in flour, 1/2 cup at a time, stirring until just moistened.
Put chocolate chips & pecans into the bowl of a food processor, and using and on/off motion, chop with steel blade.
Mix in the chopped ingredients, and spread into prepared pan.
Bake at 350 for 30 minutes; cool in pan on wire rack. When cool, refrigerate for at least an hour for ease in cutting.
Dust lightly with powdered sugar.
