Orange Scones
2 cups flour, sifted 1/2 cup sugar 1 tbs. baking powder 1 tsp. salt 3/4 cup unsalted butter, cut into pieces 2 eggs, beaten 1/2 cup whipping cream 2 tbs. melted butter 1 tbs. orange zest
Stir together flour, sugar, baking powder, and salt. Cut pieces of butter into dry mixture until coarsely mixed.
In a separate bowl combine the eggs and cream, then add to flour mixture. Blend together gently.
Place batter on a lightly floured surface and knead for one minute.
Roll dough into a rectangle, about 4" X 8". Brush with melted butter and sprinkle with orange zest and a little additional sugar. Gently roll the dough up so you have an 8" roll. Seal the seam by pressing and pinching with your fingers, then cut into 8 1" slices.
Lay slices on a lightly greased baking sheet and bake at 425 for 12-15 minutes, until golden.
