Butterscotch Muffins
Ingredients:
3 cups all-purpose flour 4 teaspoons baking powder 1 teaspoon salt 1/2 teaspoon ground cinnamon 2 eggs 1 cup sugar 1 cup buttermilk 1/2 cup melted butter 3/4 teaspoon vanilla extract 1 and 1/4 cup butterscotch chips course sugar for sprinkling (optional)
Directions:
Preheat oven to 425.
In a medium mixing bowl whisk together your flour, baking powder, cinnamon and salt. Set aside.
In a separate bowl mix eggs, sugar, buttermilk, butter and vanilla extract together.
Mix dry ingredients into your wet, mixing carefully so you do not over mix. Once the batter has combined ( a tad lumpy) fold in your butterscotch chips.
Fill 12-18 muffin cups 2/3 of the way full. Bake at 425 for 5 minutes. Reduce oven temperature to 374 and bake for an additional 20-25 minutes or until a tooth pick is inserted in the center and comes out clean.
