Triple Citrus-Ginger Quick Bread
2 c. all-purpose flour
1 c. sugar
2 tsp. baking powder
1/2 tsp. salt
Zest of 1 orange
Zest of 1 lemon
Zest of 1 lime
1/2 c. finely diced candied (crystallized) ginger
3/4 c. milk
2 eggs
8 Tbs. (1 stick) unsalted butter, melted and cooled
1 tsp. vanlla extract
Preheat oven to 350*. Lightly grease 8"x4" loaf pan.
In large bowl, whisk sugar, flour, baking powder and salt. Add citrus zests and candied ginger; toss to distribute evenly. In another bowl, whisk milk, eggs, butter and vanilla. Add to flour mixture; stir until combined. Do not overmix.
Pour batter into prepared pan. Bake until toothpick inserted into center comes out clean, 55-60 minutes. Transfer pan to wire rack; let cool 10 minutes. Turn loaf out onto rack; let cool completely.
