Pork & Beans Bread
15 oz. can pork & beans 4 eggs, beaten 1 cup vegetable oil 1 tsp. vanilla 2 cups sugar 1 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt 1 1/2 tsp. ground cinnamon 1 cup chopped pecans or walnuts 3 cups flour
Spray two 9 X 5 loaf pans with Pam.
Do NOT drain beans; pour them into a food processor or blender and process until smooth with no lumps.
Place the beaten eggs in a large mixing bowl, stir in the pureed beans, and mix well.
Add the vegetable oil and vanilla.
Add the sugar and mix it in, the mix in the baking soda, baking powder, salt, and cinnamon.
Stir in the nuts.
Add the flour in increments, adding after each addition.
Divide the batter between the two pans. Bake at 350 for 50-60 minutes until toothpick comes out dry.
Cool pans on rack for 20 minutes, then run the sharp blade of a knife around the sides to loosen the bread. Tip out on a wire rack and cool completely, then wrap in plastic wrap.
Can be frozen in a freezer bag for up to 3 months.
