Easy Cheesy Biscuits
3 cups flour, packed 2 tsp. cream of tartar 1 tsp. baking powder 1 tsp. baking soda 1 tsp. sea salt 1/2 cup softened salted butter 1/2 cup shredded cheddar cheese 1/2 cup shredded Asiago cheese 2 large eggs, beaten 1 cup sour cream 1/2 cup milk (more or less) 1/2 cup REAL grated Parmesan cheese for topping
In a medium size mixing bowl combine the flour, cream of tartar, baking powder, baking soda, and salt. Cut in the salted butter as you would for piecrust dough.
Stir in the cheddar and Asiago cheeses, then add the beaten eggs and sour cream; mix well. Add the milk and stir until everything is thoroughly combined.
Drop the biscuits by soup spoonfuls onto an ungreased baking sheet. If you wish, you can wet your fingers and shape them.
Sprinkle the shredded Parmesan on top of each biscuit.
Bake at 425 for 12-14 minutes or until golden brown on top.
Cool on baking sheet for at least five minutes.
Makes 12 biscuits.
NOTE: You can use double cheddar, or substitute other cheeses, apart from those that are creamy or too strongly flavored.
