HOSTESS CREAM FILLED CUPCAKES
CUPCAKES: 2 c. sugar 2 eggs 5 Tbsp. unsweetened cocoa powder 1 c. vegetble oil 1 c. sour milk 1 tsp. vanilla extract 2 1/2 c. all-purpose flour 1 tsp. salt 1 c. hot water 2 tsp. baking soda
Mix all ingredients together. Put in greased or paper lined muffin pans. Bake @ 350 degrees for 25 minutes or until cupcakes test done. Cool completely.
FILLING: 1/2 c. sugar 2/3 c. Crisco shortening 1/3 c. evaporated milk 1 Tbsp. water Beat the above ingredients for 10 minutes.
ADD: 1/2 c. confectioners' sugar 1 tsp. vanilla extract 1 tsp. almond extract
Insert the above mixture in the middle of cooled cupcakes with a pastry bag (I don't put a tip on the bag-I just put the coupler on it and push that into the center of the top of the cupcake and squeeze the filling in until the cupcake begins to puff out-don't put too much in or the cupcake will crack open...how do I know that? DON'T ASK!!!) Frost with any desired frosting.

Or make boxed cupcakes and then make the filling and insert it. I've done that a few times.
