Oh man this salsa is so good! Just the right amount of sweetness and spiciness. I've had fruit salsas that taste more like dessert, this isn't like that at all. It's yumm!
Peach Salsa
1/2 Cup White Vinegar
6 Cups peeled, pitted and chopped peaches (I used about 9 or 10)
1 Large Sweeet Onion, chopped fine
4 Jalapeno Peppers, finely chopped
1 Red Bell Pepper, seeded and chopped
1/2 Cup Cilantro, finely chopped
2 Tbs Liquid Honey
1 Clove Garlic, finely chopped
2 tsp Ground Cumin
1 tsp Chipotle Pepper in Adobo Sauce
In a large stainless steel sauce pan, combine vinegar and peaches. Add onion, jalapeno peppers, red pepper, cilantro, honey, garlic, cumin and chipotle. Bring to a boil over medium high heat, stirring constantly. Reduce heat and boil gently stirring frequently until slightly thickened, about 5 minutes. Remove from heat. Chill and serve.

I'd say peach salsa is even better than tomato salsa!
